Rogue is the number one class on the "skill requirement" scale. Don't be fooled by all other classes saying all we need is to press two buttons to win. While they make 1-2 decisions in a fight - we make 10-20.

First of all, must-have rogue add-ons:

Energy Watch - little bar showing when your energy is going to tick, I recommend setting it to /ew show always. <a class="postlink" href="http://ui.worldofwar.net/ui.php?id=2696">http://ui.worldofwar.net/ui.php?id=2696</a>
CCWatch - shows Crowd Controlled (stun/fear/incapacitate/etc effects) enemies around you. Without this add-on it's really hard to be a good stunlocker. <a class="postlink" href="http://ui.worldofwar.net/ui.php?id=3048">http://ui.worldofwar.net/ui.php?id=3048</a>

Lets go over some useful things most rogues don't know about:
2.05 make sure you don't have any DOTs on you before

2.1 No need to have 31 point in Assassination and 5/8 Nightslayer to ambush/cheap shot and backstab right after that (thanks to Energy Watch). Let's call this trick... I don't know... Fluffing? Don't ask why.
Problem: need to use a 60 energy skill and then another 60 energy skill right after
Given: 100 energy
Solution: before using Ambush/Cheap Shot look at the Energy Watch bar and use either skill right when your energy is about to tick, so when you use the skill - 20 energy recharges right after, now you're free to use any skill under the cost of 60 energy.

2.2 Getting out of combat in a middle of a fight (without using vanish)
There are many ways to do this, here's the list:

2.2.1 Cheap Shot, do whatever you want for about 3 seconds, run to a distance the enemy can't hit you at, wait until you're out of combat, now stealth.

2.2.2 Cheap Shot, do whatever you want, make sure you Fluff, so that after Cheap Shot is over you will soon be able to Gauge, now that the enemy is Gauged you shouldn't have any problems getting out of combat as there's only half a second until you're out of combat after Gauge fades (considering you have spent 3 points in improved Gauge).
2.2.3 You're already in combat, failed to Gouge; just hit the enemy with any skill, now that you have at least 1 combo point - Kidney Shot, you have 2 seconds to get away.
2.2.4 Lot's of other combinations you can think of now that you get the idea.

2.3 Enchant both your daggers with Crippling Poison (some prefer enchanting the off-hand with something else, like mind-numbling or instant poisons, but I don't take that chance).

2.4 Using Evasion against Warriors can save your life.
Most rogues think Evasion against a Warrior is suicide, as they will crit you for a ton of health with Overpower (this skill can't be dodged/parried/blocked, most PVP specced warriors have at least a 60% chance to crit with it, does weapon damage + some additional damage instantly, 6 second cooldown). Well, to use it they have to switch to Combat stance and you would have to dodge one of their attacks, mostly Evasion helps against 1-2 attacks, after that you have to get away or get hit by Overpower. The warrior will be able to use Overpower for about 5 seconds after you've dodged his attack.

2.5 Distract can save your/your allies life, let's say a mage is casting Frost Bolt, you turn him around and he fails to perform the skill.

2.6 Good stunlocker can kill anyone, difference in gear doesn't matter.

Fights against:
3.1 Druids
Balance druids are like Elemental Shamans (3.7); only they can shapeshift to get rid of slowing effects easily. You want to stunlock the druid while in a humanoid form. Same happens with feral druids. Always try to have something available to stop (doesn't have to be Kidney Shot or Gouge (though is the most likely option) engineering gives you lots of choices) the druid as they will attempt to escape.

3.2 Hunters
First rule in fighting hunters:
If the hunter is standing on a trap, under a flare - do not even try approaching him. Unless you greatly outgear him or you know he's got no idea how to PVP.
If the hunter is standing on a trap, not under a flare - this is what you've been given Disarm for. Don't let him see you, duh. Most likely you will get a Scatter Shot in your face, if you don't stunlock him to death, or he will Feign Death/Freezing Trap you, allowing the hunter to get far enough to start kiting you untill you're dead. In this case you must either Sprint towards him, either Vanish.
PS running away from a hunter is usually a bad idea

3.3 Mages
The most important thing about fighting mages is to never let them out of melee range for more than 2 seconds (so you’re able to interrupt them), for they will sheep you. And most likely they will, because after they Blink out of your stun there isn't much you can do (Polymorph is a 1.5 second cast skill). This is the situation that will make you look either like just another rogue or like someone who’s fought mages for a long time. When stunning the mage you know he will Blink, you should be standing in front of him so you're as close as possible to the point he will Blink to and get ready to run there, I suggest you get ready to Sprint too, Blinding the mage is a good choice as well, on the other hand Vanishing isn't, for he will probably AOE you out of Vanish. You have 15 seconds (13.5 if the mage has 4/6 pieces of the PVP set) until he will be able to blink again. Now (as you approach the target) you will, most likely, get frozen for at least 6 seconds (but in many cases at this point the mage is already dead), use any skill available to stop the mage from running away or to get you out of the frozen state. Don't push your luck and let him get far away from you, hoping he won't do enough damage and you will kill him later. Feel no pity for your cooldowns here. >:D

3.4 Paladins
Challenge in fighting a Paladin - not to fall asleep during the fight, it's long and boring. You will have to get out of combat, as described in 2.1, a couple of times (if all goes well or if the paladin wins) or it might last well over 5 minutes. Remember that paladins have bubbles and will use them to heal. Bubble - your free ticket to stealth, after it wears off you have 50 seconds to kill him until he can use his other bubble.
One sure way to prevent a paladin from bubbling is to let him start healing, this is when you Kick him and he won't be able to heal, bubble (not including Blessing of Protection) or use any Holy skill for 6 seconds. If the paladin's healing under a bubble - you might as well sit down and eat something at a nice distance, will help you survive in a long fight.
PS This is something I've noticed myself: with the same gear as the paladin's - you shouldn't have much problems killing him. Though as the gear gets better (both, yours and paladin's), the fight gets tougher, for example: both have rank 14 gear, the chances of winning are about 50/50, both have tier 0.5 - the rogue is more likely to win.

3.5 Priests
Your best friends in this fight are the PVP trinket (also WotF if you're undead) and Kick.

3.6 Rogues
So many times I've been ganked by a Rogue and stunlocked to below 10% health, after which I Gouged and stunlocked him to death. If you know you won't stunlock the rogue to death – its best use Evasion and, if you have it, Ghostly Strike.
Fast hits/second-on-the-Gouge-button rate will help you get out of a stunlock to start your own.

3.7 Shamans
Unless the shaman is Stormstrike specced you should have no problem. Couple of Frostshocks might damage you, but if you're careful enough you will interrupt every other spell.
PS I remember a lot of times when I've stunlocked the shaman half way to death when he would turn around and Stormstrike, get a Windfury proc, Earthshock me and I'm dead, not much you can do here.

3.8 Warlocks
Sap the Warlock, kill the pet, stealth, kill the Warlock. I suggest you do everything possible to have a perfect stunlock or Deathcoil will heal the Warlock, fear and damage you and by the time you're able to do anything - you have 3 dots on you while the warlock runs away. If you don't have Sprint up at this point you will most likely die.

3.9 Warriors
The hardest class to kill as a rogue. After Cheap Shotting the warrior you can only hope that he will not go into Berserker stance, for in Berserker he can use Berserker Rage to get out of Gouge, which will screw up your stunlock, they might also get out of Cheap Shot/Kidney Shot with the PVP trinket. You want to get out of combat as many times as possible to Cheap Shot the warrior and get easy combo points, this is very tricky because you can't stay close enough to get hit and far enough to get Intercepted (run in circles around the warrior, best way not to get hit). Unless you're trying to kill the warrior naked (like the World of Roguecraft rogue), I suggest you Expose Armor, gives you a nice damage boost. See 2.4 for a tip on using Evasion.

All specs have been used by me for at least 2 weeks each.
4.1 Ever famous 21/8/22, you can play around with 1 talent point spent in Dirty Deeds (Subtlety tree) and choose whether to spend 2 points in Remorseless Attacks and 1 in Improved Expose Armor (both talents in Assassination tree) or the other way.

4.2 Good sword spec, thanks to Hemorrhage(35 energy cost) you get combo points really fast(rumour has it Hemmorhage hasn't been effected by normalization).

4.3 120 energy spec (extra 10 comes from 5/8 Nightslayer). You don't have to spend 2 points in Elusiveness (Subtlety).

4.4 Any spec including Adrenaline Rush is not good for PVP.

Fellow mouse-clickers: no matter how skilled you are at mouse-clicking you will never be as fast as a non-mouse-clicker. Good key binding will maximize your performance. Let's look at mine (I use the spec described in 4.1):
Unstealthed:
“1” Unstealthed: Stealth, “1” Stealthed: Cheap Shot, thanks to this I can spam “1” until I go into Stealth and right after that will perform Cheap Shot
Distract: “R” - you have to be quick with this skill and “R” is really easy to press (I set chat reply to “U”)
Kick: “F” - easy to press, you need the speed with this skill
Cold Blood: “V”
PVP trinket: “G” - easy to press, you need to be quick here too
Racial ability: “Z” - in my case it's Will of the Forsaken
F4: Vanish
F5: Blind
F1: Sprint
F2: Evasion
Y: Mount
Toggle Autorun: Middle Mouse Button - I use it all the time so there's no need to have to stop in order to type something
In 2 on 1 battles Sap is your best friend. You always want to Sap the one with more armor or whoever isn't the healer, if both are the same class - Sap the one that looks stronger. 3 on 1 battles are most of the time really tough, but not impossible, Sap one, blind another, fight for 10 seconds, Vanish, Sap the person that just got out of Blind... Possibilities are endless; just keep in mind the Diminishing Returns.
Videos have taught me most of the tricks I know about every class.
First episode of “World of Roguecraft” will show you what a good rogue is capable of, even without good gear (don’t listen to the angry warlock; he only talks about 1 side of the story).

"Perkulator 2" shows good skill put to use.
Don't just settle on Rogue videos, watch everything that has been highly ranked (for example: 4+ stars on Google video). The more you know about how to play other classes, the better you are at defeating them.

One more thing - you will never know whether something's possible unless you've tried it. I remember while levelling my Undead Rogue, was level 31 at the time, I saw a gnome mage with tier 2 head piece, most rogues would run. I decided to see what happens if I fight him. So I start the fight, he decides to play around with me, doesn't use any insta-cast spells and soon he's down to 40%, I get a Backstab crit, use Cold Blood and crit him with a 5 point Eviscerate for 500, he's almost dead, Blinks, I shoot an arrow at him and he dies.
After that I was never afraid to take on players whose level appeared in red or as a skull and won about every tenth fight.
Moral: don't be afraid to take on challenges that seem to be impossible.
